Santa Caterina Chianti Classico DOCG Grand Selection
The Chianti Classico Gran Selezione Santa Caterina is named after a four-hectare vineyard, south-facing and situated at an altitude between 550 and 600 meters. This galestro-rich soil and favorable climate contribute to the exceptional quality of the Sangiovese grapes grown here. The grapes are vinified in purity, with careful aging that involves moderate use of wood.
At harvest time, the grapes are carefully selected and fermented in stainless steel tanks at controlled temperatures. Skin contact lasts 3 to 4 weeks, with constant monitoring of extraction. Subsequently, malolactic fermentation takes place in stainless steel, followed by aging for about 14 months: half of the wine matures in 34-hectoliter Slavonian oak barrels, while the other half rests in French oak tonneaux. The final stage of aging takes place in the bottle for approximately 18 months.
