Vin Santo of Chianti Classico DOC
The vinification takes place in small barrels, known as caratelli, with a capacity ranging between 100 and 200 liters. It is initiated by inoculating the so-called "mother," which consists of colonies of various yeasts derived from previous vinifications, into the must obtained from dried grapes laid on mats. The maturation lasts for 10 years in chestnut barrels, where fermentation occurs slowly and intermittently, influenced by natural fluctuations in temperature and pressure.

TASTING NOTES
Color: Brilliant amber.
Nose: Notes of raisins, candied orange, dried apricot, walnut husk, and saffron.
Palate: Warm and enveloping entry, balanced by acidity that offsets its softness. The finish features walnut, sweet and citrusy spices, and exceptional persistence.
